Steam wilting quickly inactivates enzymes responsible for oxidation, minimizing the amount of oxidation that occurs during processing. This preserves the green color and fresh flavor of the tea.As a result, tea made with steam wilting smells fresher and more refreshing, with a natural sweetness and a strong herbal flavour, making it an irreplaceable treasure among green teas.
