Tea processing and storage
Tea processing is the process of transforming the picked fresh leaves into tea products that can be consumed by people through a series of physical and chemical changes. The process and technology of tea processing directly affects the quality and taste of tea. In the processing process, temperature, humidity, time and other key parameters should be strictly controlled to ensure that the aroma and flavour of the tea leaves are fully developed. At the same time, it is necessary to strengthen the maintenance and repair of the processing equipment to ensure the normal operation of the equipment and the smooth progress of tea processing. After the completion of tea processing, it is necessary to carry out proper storage and custody, to prevent the occurrence of tea moisture, mould, deterioration and other phenomena.
In order to control the quality of organic tea, in 2000, the organic tea farmers of Dazhangshan Mountain initiated the establishment of Wuyuan Dazhangshan Organic Tea Farmer'Association. In October 2001, the association was certified by the Fairtrade Labelling Organizations International (Fairtrate) and became the first Chinese tea supplier of Fairtrate.
